Healthier Buffalo Chicken Dip

Healthier Buffalo Chicken DipKelly Harrison

Is it even the Super Bowl without something bold and Buffalo? Not in my playbook! This healthier spin on the classic dip is lighter on saturated fat but still delivers that crave-worthy punch. Creamy Greek yogurt and cream cheese adds richness and extra protein boost (17 grams per serving!). And thanks to the shortcut of using lean rotisserie chicken, it’s a total breeze to whip up. I love serving it with crunchy veggie dippers — carrots, celery and bell peppers — for the perfect scoop and a sneaky-delicious way to load up on more veggies. Game on!

Cheeseburger-Stuffed Sweet Potatoes

These cheeseburger-stuffed sweet potatoes are the ultimate mashup of comfort and nutrition. Roasted sweet potatoes create a naturally sweet, tender base that pairs perfectly with the savory, cheesy ground meat filling. Pile on your favorite burger fixings and finish with a drizzle of my tangy special sauce for all the juicy, indulgent flavors of a classic cheeseburger — no bun required. It’s a crowd-pleasing recipe that’ll have your guests going back for seconds long before halftime.

Football Hummus Board

Football Hummus Board

This festive football hummus board is a total touchdown, sure to inspire high-fives and giggles. Shaped like a football and surrounded by a vibrant “field” of fresh veggies, it’s a festive centerpiece that’s as easy to assemble as it is to devour. Just grab your favorite hummus, add chive “laces” for a playful, sporty touch and sprinkle paprika (I love using smoked paprika, but sweet works, too) to mimic that classic football leather look. Surround it with crisp green dippers like cucumbers, snap peas, green beans and broccoli, and watch your guests huddle around — no flags on this play!

Ingredients

  • hummus, amount based on platter size
  • fresh chives
  • sweet or smoked paprika
  • extra-virgin olive oil
  • green vegetables, for the “field” (cucumber, broccoli, celery, green beans, sugar snap peas, etc.)

Preparation

  1. Spoon the desired amount of hummus onto the board. Using a spatula, shape the hummus into an oval, football-like form.
  2. Cut fresh chives: one long piece for the center seam and eight shorter pieces to create the cross-stitches. Gently press the chives onto the hummus to resemble football laces.
  3. Sprinkle a dash of paprika over the hummus and drizzle extra-virgin olive oil lightly over the top.
  4. Surround the football-shaped hummus with fresh green vegetables (aka the “field”).
